Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 3–4 flavors of Jello gelatin powder (e.g., strawberry, lime, grape)
  • Additional sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the large egg to the butter mixture and beat until fully combined.
  4. Whisk together the all-purpose flour, baking powder, and salt in another bowl.
  5. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  6. Divide the dough into 3–4 equal parts and add Jello flavor to each.
  7. Chill each dough portion in the refrigerator for 15–20 minutes.
  8. Roll each dough portion into balls, coat them in sugar, and flatten on the baking sheet.
  9. Bake for 8–10 minutes, or until the edges are set and tops are cracking.
  10. Cool on the baking sheet for 2 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to one week.
