A classic Key Lime Pie that perfectly balances tangy lime and creamy sweetness, inspired by sunny shores.

  • ½ cup sugar
  • ½ cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup fresh key lime juice
  • 1 tablespoon lime zest
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) to prepare for baking that luscious crust.
  2. Mix the graham cracker crumbs, sugar, and melted butter until well combined. The mixture should resemble damp sand.
  3. Press the graham cracker mixture firmly into the bottom and sides of a 9-inch pie pan, ensuring even coverage for a solid, tasty crust.
  4. Bake the crust in the preheated oven for about 8-10 minutes, then remove and let cool. You’ll know it’s ready when it’s lightly golden.
  5. Whisk together the egg yolks and sweetened condensed milk until smooth, creating a creamy base that will hold all the zesty flavors.
  6. Add the fresh key lime juice and lime zest until fully combined.
  7. Pour the filling into the cooled pie crust and bake for an additional 15 minutes.
  8. Remove from the oven and let it cool to room temperature before popping it in the fridge. Chill for at least 3 hours.
  9. Whip the heavy cream until soft peaks form, then add powdered sugar and continue whipping until stiff peaks form.

Notes

For an extra crispy crust, let it cool completely in the oven with the door ajar. Use fresh key limes for the best flavor, but regular limes will also work. Ensure to chill the pie adequately to set the filling perfectly.
