A refreshing and creamy Key Lime Pie that strikes the perfect balance between tart and sweet with a crunchy graham cracker crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/3 cup granulated sugar
  • 4 large egg yolks
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup fresh lime juice
  • Zest of 2 limes
  • 1/4 teaspoon salt
  • Whipped cream for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press this mixture into the bottom and up the sides of a pie dish.
  3. Bake the crust for 8-10 minutes until golden, then allow it to cool.
  4. Whisk together egg yolks, sweetened condensed milk, salt, lime juice, and lime zest until smooth in a separate bowl.
  5. Pour the filling into the cooled crust and bake for an additional 15 minutes.
  6. Let the pie cool on the counter for a bit, then refrigerate for at least 3 hours or overnight.
  7. Serve chilled, topped with whipped cream if desired.

Notes

Use fresh limes for the best flavor. Keep the whipped cream separate to maintain its texture. Can be frozen for up to a month.
