Instructions
Prepare the Creamy Vanilla Custard: In a medium saucepan, combine the milk, heavy cream, granulated sugar, and salt. Heat over medium heat, stirring occasionally, until hot but not boiling.
Temper the Egg Yolks: Whisk together the egg yolks and cornstarch in a bowl. Gradually add hot milk mixture to the egg yolks, whisking constantly.
Combine and Cook the Custard: Pour egg yolk mixture back into the saucepan. Stir constantly over medium heat until it thickens and bubbles, about 5-7 minutes.
Flavor the Custard: Remove from heat and stir in 1 tablespoon of vanilla extract. Cool to room temperature, then refrigerate until set, about 1-2 hours.
Prepare the Chocolate Ganache: In a heatproof bowl, combine the semi-sweet chocolate chips and unsalted butter. Heat 1 cup of heavy cream in a small saucepan until simmering.
Melt the Ganache: Pour hot cream over the chocolate mixture, let sit for 5 minutes, then stir gently until smooth.
Sweeten the Ganache: Add powdered sugar and vanilla extract, stirring until combined. Set aside to cool slightly.
Assemble the Cookie Lasagna: In a 9×13 inch baking dish, lay down a layer of chocolate chip cookies at the bottom.
Add the Custard Layers: Spread half of the custard over the cookies, then place another layer of cookies followed by the remaining custard.
Top it Off: Add a final layer of cookies and pour the chocolate ganache on top, spreading evenly.
Chill the Layers: Refrigerate for at least 4 hours or overnight.
Garnish and Serve: Garnish with additional chocolate chips or cookie crumbles, cut into squares, and enjoy!
