  • 4 medium-sized fresh artichokes
  • 4 cups (1 liter) vegetable broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons olive oil (plus extra for drizzling)
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
  • Salt and black pepper to taste
  • Water with lemon juice for soaking artichokes

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and choke, then soak them in water mixed with lemon juice.
  2. Sauté the onion in olive oil until translucent.
  3. Add the minced garlic and sauté for an additional minute.
  4. Cook the artichokes in the pot for about 5 minutes.
  5. Combine the vegetable broth and thyme, bring to a boil, then simmer for 20 minutes.
  6. Blend the soup until smooth and creamy.
  7. Season with lemon juice, salt, and black pepper to taste.
  8. Serve the soup in bowls, drizzled with olive oil and garnished as desired.

Notes

This soup stores beautifully for up to 3 days in the refrigerator. Adjust the consistency with extra broth when reheating.
