Delightful lemon bars with a buttery crust and a tangy lemon filling, perfect for gatherings or a simple treat at home.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. Mix together the flour and powdered sugar in a medium bowl. Cut in the butter until crumbly and press into the bottom of the prepared pan.
  3. Bake the crust for 15 minutes until gently golden.
  4. Whisk together the granulated sugar, eggs, lemon juice, lemon zest, and baking powder in another bowl. Pour over the baked crust.
  5. Return the pan to the oven and bake for an additional 20-25 minutes until the filling is set and golden.
  6. Allow to cool completely, dust with powdered sugar, and cut into squares or bars to serve.

Notes

Store leftovers in an airtight container. They can be refrigerated for up to a week or frozen for longer storage.
