Delightful lemon bars with a tangy filling and buttery crust, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. Mix together 1 cup of all-purpose flour, softened butter, 1/4 cup powdered sugar, and salt until crumbly. Press into the bottom of the prepared pan.
  3. Bake the crust for about 15 minutes, or until lightly golden.
  4. Whisk together eggs, 1 cup granulated sugar, 2 tablespoons flour, lemon juice, and lemon zest until smooth.
  5. Pour the lemon mixture over the baked crust evenly.
  6. Bake for an additional 20-25 minutes, or until the filling is set.
  7. Cool completely at room temperature and dust with powdered sugar before cutting.

Notes

For best results, use fresh lemon juice and include the zest for more flavor. Store leftovers in an airtight container.
