Delightful lemon bars with a buttery crust and vibrant lemon filling, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Mix together flour and powdered sugar. Add the softened butter and blend until crumbly.
  3. Press the mixture into the bottom of the prepared baking dish.
  4. Bake the crust for 15 minutes, or until lightly golden.
  5. Whisk together granulated sugar, eggs, lemon juice, lemon zest, and salt until well combined.
  6. Pour the lemon mixture over the baked crust and return it to the oven for another 20-25 minutes, or until set.
  7. Cool completely in the pan and dust with powdered sugar before cutting into squares.

Notes

For a smoother filling, strain the lemon juice before whisking to ensure no pulp remains. Use fresh lemons for the best flavor.
