Delightful lemon bars with a buttery crust and tangy lemon filling, perfect for summer gatherings.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. In a mixing bowl, combine the flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs. Press into the bottom of the pan.
  3. Bake the crust for 15 minutes until crispy.
  4. While the crust is baking, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder until smooth.
  5. Pour the lemon filling mixture over the hot crust, spreading evenly.
  6. Return the pan to the oven and bake for an additional 20 minutes until the filling is set.
  7. Let the pan cool completely, then dust with powdered sugar before cutting.

Notes

Store in an airtight container in the refrigerator for up to one week. Freezes well for up to three months.
