A delightful fusion of zesty lemon and sweet blueberries, this Lemon Blueberry Bread is a perfect treat for breakfast or dessert.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Add in the eggs one at a time, then stir in the lemon juice, lemon zest, and vanilla extract.
  5. Combine the dry ingredients with the wet mixture, stirring until just combined.
  6. Fold in the fresh blueberries gently.
  7. Pour the batter into the prepared loaf pan and bake for 60-70 minutes.
  8. Mix the powdered sugar with lemon juice to create a glaze once your bread cools.
  9. Let the bread cool before drizzling the glaze on top.

Notes

For added moisture, half of the butter can be substituted with unsweetened applesauce. If using frozen blueberries, do not thaw them before adding.
