Warm, fluffy biscuits bursting with blueberries and bright lemon flavor, perfect for brunch or an afternoon snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the all-purpose flour, baking powder, salt, and sugar.
  3. Combine the melted butter, milk, lemon zest, and lemon juice in another bowl.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Gently fold in the fresh blueberries.
  6. Pour the batter into a greased baking dish.
  7. Bake for 20-25 minutes or until golden brown.
  8. Allow to cool slightly before serving warm.

Notes

Best enjoyed fresh out of the oven, optionally with butter or honey. Leftovers can be stored in an airtight container for up to 2 days.
