Wholesome and delicious protein bites bursting with lemon zest and fresh blueberries, perfect for a nutritious snack on the go.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup protein powder
  • 1/2 cup fresh blueberries
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1/4 teaspoon salt

Instructions

  1. Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, protein powder, and salt.
  2. Create the Wet Mixture: In a separate bowl, mix together the peanut butter, honey, lemon juice, and lemon zest until smooth.
  3. Pour the wet ingredients into the dry ingredients and mix until well combined.
  4. Fold in the Blueberries: Gently fold in the fresh blueberries.
  5. Roll the mixture into small balls, about 1 inch in diameter.
  6. Place the bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes.
  7. Store in an airtight container in the fridge for up to a week.

Notes

Adjust sweetness by varying the honey or maple syrup. Can substitute nut butter for seed butter if allergic.
