  • 12 oz bowtie pasta
  • 2 chicken breasts, diced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the bowtie pasta according to package instructions. Drain and set aside.
  2. Heat the butter and olive oil in a large skillet over medium heat until melted and bubbly.
  3. Add the diced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the minced garlic and let it sizzle for an additional minute.
  5. Add in the broccoli florets and cook until tender, about 3-4 minutes.
  6. Squeeze fresh lemon juice over the chicken and broccoli mixture.
  7. Toss the cooked pasta with the chicken and broccoli mixture.
  8. Season with salt and pepper to taste.
  9. Serve warm, garnished with freshly grated Parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet with a splash of water or stock.
