A vibrant and flavorful grilled chicken dish marinated with fresh lemon and herbs.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Mix together olive oil, lemon juice, minced garlic, chopped rosemary, chopped thyme, salt, and pepper in a bowl to create the marinade.
  2. Place the chicken breasts into the marinade and ensure they are well coated. Let them marinate for at least 30 minutes to 1 hour.
  3. Preheat the grill to medium-high heat while the chicken is marinating.
  4. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F or 75°C).
  5. Remove the chicken from the grill and let it rest for a few minutes before serving.

Notes

For added flavor, try marinating the chicken longer than 1 hour. Pair with a green salad or roasted vegetables.
