  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C) and grease and flour four ramekins.
  2. Melt the butter in a microwave-safe bowl, then stir in the powdered sugar until smooth.
  3. Add the eggs and egg yolks, mixing well for a creamy base.
  4. Stir in the vanilla extract, fresh lemon juice, zest, and a pinch of salt until combined.
  5. Fold in the all-purpose flour gently to create a smooth batter.
  6. Divide the batter evenly among the prepared ramekins.
  7. Bake for 12-14 minutes until the edges are firm but the center is soft.
  8. Let the cakes cool briefly, then invert onto plates to serve warm.
