  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon (juiced and zested)
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme (optional)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together the olive oil, lemon juice, lemon zest, black pepper, salt, minced garlic, and thyme (if using).
  3. Take each chicken breast and coat it generously with the marinade.
  4. Lay the coated chicken breasts in a baking dish, and pour any remaining marinade over the top.
  5. Pop your baking dish in the oven and bake for about 25-30 minutes, or until the chicken is cooked through.
  6. Once baked, take the chicken out and sprinkle fresh parsley over it before serving.

Notes

For extra flavor, let the chicken marinate for an hour before cooking. Fresh herbs make a big difference.
