  • 1/4 cup poppy seeds
  • 1/2 cup granulated sugar

  • 2 large eggs
  • 1/2 cup plain yogurt
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Whisk together the flour, baking powder, baking soda, salt, and poppy seeds in a bowl.
  3. Cream together the sugar and softened butter until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the yogurt, lemon juice, lemon zest, and vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack.
