Crispy and cheesy Loaded Potato Skins loaded with bacon, cheese, and topped with sour cream and green onions, perfect for snack time or as an appetizer.

Ingredients

  • 4 large russet potatoes
  • 8 strips of bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly, and prick several holes in each.
  3. Bake them in the preheated oven for about 45 minutes or until tender.
  4. Cook the bacon strips until crispy, about 8-10 minutes.
  5. Let the potatoes cool slightly, then cut each potato in half and scoop out some of the insides.
  6. Brush the insides of the potato skins with olive oil and season with salt and pepper.
  7. Return them to the oven for an additional 10 minutes.
  8. Fill each potato half with shredded cheddar cheese and crumbled bacon.
  9. Place the stuffed skins back in the oven for another 5-10 minutes until the cheese is melted.
  10. Serve hot, topped with sour cream and green onions.

Notes

For extra flavor, season with garlic powder or smoked paprika. Feel free to customize with your favorite toppings.
