Loaded Potato Skins

Crispy potato skins loaded with gooey cheddar cheese and savory bacon, topped with sour cream and green onions.

Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes under cold water and pierce them with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Place the potatoes directly on the oven rack and bake for about 45 minutes.
  5. Let the potatoes cool slightly and cut them in half lengthwise.
  6. Scoop out some of the insides, leaving a small layer of potato.
  7. Brush the insides with olive oil and sprinkle with salt and pepper.
  8. Return the skins to the oven and bake for another 10 to 15 minutes.
  9. Fill each skin with shredded cheese and crumbled bacon.
  10. Return to the oven for an additional 5 to 10 minutes.
  11. Top each potato with sour cream and green onions before serving.

Notes

Feel free to customize your toppings with jalapeños or guacamole for extra flavor.
