A warm and hearty taco bowl featuring crispy baked potatoes topped with savory ground beef or turkey, black beans, corn, and fresh vegetables.

  • 4 large potatoes, diced
  • 1 pound ground beef or turkey
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • Sour cream, for serving
  • Fresh cilantro, for garnish
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper. Spread them on a baking sheet.
  3. Roast the potatoes for about 25-30 minutes, or until crispy and golden brown.
  4. Heat a skillet over medium heat and add the ground beef or turkey until browned.
  5. Stir in the chili powder, cumin, salt, and pepper, mixing well to combine.
  6. Layer the roasted potatoes, followed by the cooked meat, black beans, corn, diced tomatoes, and avocado in a large serving bowl.
  7. Top with shredded cheese, sour cream, and fresh cilantro.
  8. Serve immediately for the best flavor and texture.

Notes

For extra crispy potatoes, spread them out in a single layer on the baking sheet. You can adjust the spice levels by altering the chili powder.
