Loaded steak potatoes topped with juicy steak, melted cheddar cheese, and sour cream for a deliciously comforting meal.

  • 2 large russet potatoes
  • 1 pound steak (sirloin or ribeye)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the potatoes by washing them, piercing with a fork, rubbing with olive oil, and seasoning with salt and pepper. Bake for 45-60 minutes.
  3. Season the steak with salt and pepper.
  4. Sear the steak in a skillet over medium-high heat for 4-5 minutes per side for medium-rare.
  5. Rest the steak on a cutting board, then slice it into thin strips.
  6. Fluff the baked potatoes and create space for toppings.
  7. Load the potatoes with sliced steak and shredded cheddar cheese.
  8. Top with a dollop of sour cream.
  9. Garnish with chopped chives or green onions before serving.

Notes

For extra crispy skin, bake potatoes directly on the oven rack. Sweet potatoes can be used for a healthier alternative.
