A guilt-free indulgence featuring creamy peanut butter layered on sweet frozen banana, drizzled with rich dark chocolate.

  • 2 large firm, ripe bananas (about 240g total)
  • 23 tablespoons natural creamy peanut butter (unsweetened)
  • 2 tablespoons roasted unsalted peanuts, roughly chopped
  • 1/4 cup (40g) dark chocolate chips (70% cacao or higher)
  • 1 teaspoon coconut oil
  • Sea salt flakes (optional)
  • Optional add-ins: mini pretzel pieces, shredded coconut, chopped dates

Instructions

  1. Prepare the bananas by peeling them and slicing into thick coins, about 1/2 inch each (you should get 16-20 coins).
  2. Arrange banana slices on a parchment-lined baking sheet, making sure they do not touch.
  3. Freeze banana slices for 15-20 minutes until firm but not rock hard.
  4. Spread about 1/2 teaspoon of peanut butter on each banana coin.
  5. Add chopped peanuts and a pinch of sea salt (if using). Include optional toppings if desired.
  6. Melt chocolate chips and coconut oil in a microwave-safe bowl, microwaving in 15-second bursts until melted and smooth (about 45 seconds total).
  7. Drizzle or dip the tops of banana bites in melted chocolate for a thicker coating.
  8. Freeze the tray for 30-60 minutes until chocolate is set and bananas are frozen solid.
  9. Let sit at room temperature for 5 minutes before serving for the best texture.
