This low carb chicken dish features succulent chicken breasts sautéed with fresh spinach and tangy feta cheese, perfect for a quick and nutritious meal.

  • 4 chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 cups spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp lemon juice

Instructions

  1. Heat the olive oil in a large skillet over medium heat to prepare for cooking the chicken evenly.
  2. Season chicken breasts generously with salt, pepper, and garlic powder, ensuring each piece is well-coated for flavor.
  3. Cook the chicken breasts in the skillet for 5–7 minutes per side, until each piece is golden brown and reaches an internal temperature of 165°F. Remove the cooked chicken from the skillet and set aside.
  4. Sauté the chopped spinach in the same skillet for 1–2 minutes until just wilted, absorbing the flavors left in the pan from the chicken.
  5. Combine the crumbled feta cheese and lemon juice with the spinach, cooking for another 1–2 minutes until heated through and combined.
  6. Return the chicken breasts to the skillet and spoon the warm spinach-feta mixture on top. Serve immediately while hot.

Notes

For a creamier texture, drizzle Greek yogurt over the top when serving. Customize the greens by adding asparagus or kale if spinach isn’t available.
