These Make Ahead Breakfast Burritos are easy to prepare and perfect for busy mornings, filled with eggs, sausage or bacon, and colorful veggies.

Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 cup cooked and crumbled sausage or bacon
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Additional toppings (salsa, avocado, etc.) optional

Instructions

  1. Whisk together the eggs, milk, salt, and pepper in a bowl.
  2. Sauté the diced bell peppers and onions in a skillet over medium heat until soft.
  3. Add the egg mixture to the skillet and gently cook until the eggs are set.
  4. Stir in the cooked sausage or bacon and shredded cheese until melted.
  5. Take a large flour tortilla and fill with the egg mixture, then fold and roll tightly.
  6. Wrap each burrito in foil for storage.
  7. Reheat in the oven or microwave until warm.

Notes

These burritos are perfect for meal prep! Store wrapped burritos in the refrigerator for up to 4 days or freeze for up to 3 months.
