A refreshing and nourishing dessert made with chia seeds and ripe mango, perfect for breakfast or a sweet treat.

Ingredients

  • 1 cup almond milk
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey
  • 1 ripe mango, diced
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Whisk together the almond milk, chia seeds, maple syrup (or honey), vanilla extract, and a pinch of salt in a bowl.
  2. Cover the bowl and refrigerate for at least 120 minutes, or overnight for best results.
  3. Peel and dice the ripe mango into bite-sized pieces.
  4. Layer the thick chia pudding with the fresh diced mango in a glass or bowl.
  5. Serve immediately and enjoy!

Notes

Chia pudding can be stored in the fridge for up to 5 days. Add fresh mango before serving for best flavor.
