Bright and fruity Mango Curd Bars with a buttery crust and sweet mango filling, perfect for summer.

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 cup mango puree (fresh or canned)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lime juice
  • 1 teaspoon lime zest
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan.
  2. In a mixing bowl, combine flour, softened butter, powdered sugar, and salt. Press the mixture into the bottom of the prepared pan to form the crust. Bake for 15 minutes.
  3. In another bowl, whisk together mango puree, granulated sugar, eggs, lime juice, and lime zest until smooth. Pour the mango filling over the crust.
  4. Gently swirl in fresh raspberries into the filling, ensuring they are evenly distributed yet still visible for a beautiful finish.
  5. Bake for another 20-25 minutes or until the filling is set.
  6. Let the bars cool, then refrigerate for at least 2 hours before cutting into bars. Serve chilled.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Freeze for up to a month.
