A delightful dessert featuring creamy mango curd in a flaky tart shell, perfect for summer gatherings.

  • 1 cup mango puree
  • 3/4 cup sugar
  • 3 large eggs
  • 1/4 cup butter, melted
  • 1 tablespoon lemon juice
  • 1 pre-baked tart shell
  • Whipped cream (for serving)

Instructions

  1. Combine mango puree, sugar, and eggs in a medium saucepan and cook over medium heat, stirring constantly until thickened (10-15 minutes).
  2. Stir in melted butter and lemon juice until well combined.
  3. Pour the mango curd into the pre-baked tart shell, smoothing the top with a spatula.
  4. Chill in the fridge for at least 2 hours or until set.
  5. Serve with whipped cream, topping each slice with a dollop and optional mint.

Notes

Make sure your mango puree is fresh for the best flavor. Stir continuously while cooking to prevent sticking.
