Delicious muffins that combine the flavors of pancakes and crispy bacon with a hint of maple syrup, perfect for breakfast or a sweet treat.

  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  • ¼ cup maple syrup, plus more for serving
  • 2 tablespoons melted unsalted butter
  • ½ cup cooked and crumbled bacon

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare your muffin tin by greasing it or lining it with paper liners to prevent sticking.
  2. Whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.
  3. Combine the egg, buttermilk, maple syrup, and melted butter until everything is smoothly integrated.
  4. Mix the wet ingredients into the dry mixture, stirring gently until just combined.
  5. Fold in the cooked and crumbled bacon until evenly distributed.
  6. Fill the muffin cups about two-thirds full with the batter.
  7. Bake for 15-18 minutes until golden brown and a toothpick inserted comes out clean.
  8. Cool in the tin for a few minutes, then transfer to a wire rack. Serve warm with extra maple syrup.
