A delicious chicken dish with a creamy sauce, cherry tomatoes, and garlic—perfect for romantic dinners.

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning. Add to the skillet, cooking until golden brown on both sides and fully cooked through, about 5-7 minutes per side.
  3. Set the chicken aside on a plate, allowing the flavors to mingle.
  4. Sauté minced garlic and halved cherry tomatoes in the same skillet until the tomatoes soften.
  5. Pour in heavy cream and add grated Parmesan cheese. Stir until melted and combined.
  6. Add fresh spinach and cook until it wilts beautifully.
  7. Return the chicken to the skillet and spoon the creamy sauce over it, letting it simmer for a couple of minutes.
  8. Serve warm, garnished with additional Parmesan if desired.

Notes

Let the chicken rest after cooking for better flavor mingling. For a spicier kick, add red pepper flakes while sautéing garlic.
