A comforting dish featuring tender chicken, creamy sauce, and pillowy tortellini with sun-dried tomatoes and spinach.

Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 8 ounces tortellini
  • 1 cup spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then add to the skillet. Cook until golden and cooked through, about 6-7 minutes per side. Remove and slice.
  2. Add minced garlic to the same skillet and cook for 30 seconds until fragrant.
  3. Pour in heavy cream and chicken broth, stirring to combine. Add sun-dried tomatoes and Italian seasoning. Simmer for about 5 minutes.
  4. Add tortellini to the skillet and cook according to package instructions, about 3-4 minutes.
  5. Stir in spinach and the cooked chicken, and cook until the spinach wilts.
  6. Serve warm, topped with grated Parmesan cheese.

Notes

Pairs well with a crisp side salad or garlic bread. Store leftovers in an airtight container in the fridge for up to three days.
