Delicious and convenient breakfast sandwiches perfect for meal prep and busy mornings.

Ingredients

  • 6 English muffins
  • 12 Eggs
  • 1 cup Cheese (cheddar or your choice)
  • 6 slices Cooked bacon or sausage
  • 2 cups Spinach or other greens
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) so it’s nice and hot for your baked eggs.
  2. Grab a muffin tin and give it a light greasing.
  3. Crack the eggs directly into the muffin tin, seasoning with salt and pepper.
  4. Slide the muffin tin into the preheated oven and bake for 15-20 minutes, or until the eggs are fully set.
  5. Pop the English muffins in the toaster to a golden-brown finish.
  6. Once the eggs are cooked, assemble your sandwiches with cheese, bacon or sausage, spinach, and baked eggs on the toasted muffin halves.
  7. Wrap the assembled sandwiches in foil for easy grab-and-go options.
  8. Store the sandwiches in the refrigerator and microwave when ready to eat.
