Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine the chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta cheese in a large bowl. Stir gently to mix everything together.
  2. Whisk together the olive oil, lemon juice, oregano, salt, and pepper in a separate small bowl.
  3. Pour the dressing over the chickpea mixture and toss gently to combine.
  4. Garnish with fresh parsley and serve immediately, or chill before serving.

Notes

For a smoky flavor, consider adding roasted red peppers. Store leftovers in an airtight container in the refrigerator for 2-3 days.
