Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, chopped
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions, then drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, halved cherry tomatoes, diced cucumber, chopped red onion, sliced kalamata olives, and crumbled feta cheese.
  3. Whisk together the olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
