A vibrant and crunchy salad made with fresh vegetables, tangy feta, and briny olives, perfect for a light meal or side dish.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. In a saucepan, bring 2 cups of water to a rolling boil. Once boiling, add the quinoa, cover, and let it simmer for 15 minutes.
  2. Prepare the vegetables by combining the cooled quinoa with cherry tomatoes, cucumber, and red onion in a large bowl. Add olives, feta, and parsley.
  3. Whisk together olive oil and lemon juice in a small bowl, then season with salt and pepper.
  4. Combine the dressing with the salad and toss gently. Serve chilled or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will deepen as it sits.
