Ingredients

Scale
  • 8 oz spaghetti or pasta of choice
  • 1 lb shrimp, cleaned and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside, keeping it warm.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side. Season with salt and pepper.
  4. Stir in the halved cherry tomatoes and sliced Kalamata olives, cooking for an additional 2-3 minutes until the tomatoes soften.
  5. Toss the cooked pasta into the skillet with the shrimp and vegetable mixture. Add feta cheese and chopped parsley, stirring to combine.
  6. Mix everything until well combined, and serve hot with lemon wedges on the side.

Notes

For added flavor, try adding a splash of white wine after cooking the shrimp. Serve alongside a crisp salad or garlic bread.
