  • 1 lb sirloin steak (about 1-inch thick)
  • 3 tablespoons olive oil
  • 2 garlic cloves (minced)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • â…“ cup feta cheese (crumbled, optional)
  • ¼ cup fresh parsley or dill (chopped)
  • 1 cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove (minced)
  • 1 tablespoon fresh dill (chopped)
  • 3 tablespoons olive oil (for vinaigrette)
  • 2 tablespoons fresh lemon juice (for vinaigrette)
  • 1 teaspoon honey (omit for Whole30)
  • 1 garlic clove (minced, for vinaigrette)
  • ½ teaspoon dried oregano (for vinaigrette)

Instructions

  1. Mix the marinade ingredients in a bowl: olive oil, minced garlic, lemon juice, oregano, thyme, salt, and black pepper. Coat the sirloin steak in this mixture and let it marinate for at least 30 minutes or up to 4 hours.
  2. In a separate bowl, mix together the tzatziki ingredients: Greek yogurt, grated cucumber, lemon juice, minced garlic, chopped dill, and a dash of salt and pepper. Place it in the fridge to chill.
  3. Whisk together the olive oil, lemon juice, honey, minced garlic, oregano, and salt and pepper in a small bowl for the vinaigrette.
  4. Heat a skillet over medium-high heat and sear the marinated steak for 4–5 minutes on each side. Let it rest for a few minutes before slicing it thinly against the grain.
  5. Layer cooked grains as the base in a bowl, followed by sliced steak. Top with cherry tomatoes, cucumber, red onion, kalamata olives, feta cheese (if using), and fresh herbs. Drizzle with tzatziki and lemon vinaigrette.

Notes

Marinate steak for at least 1 hour for best flavor. Slice against the grain for tender bites. Adjust toppings to fit dietary preferences.
