Migas is a comforting dish made with crispy tortillas, fluffy scrambled eggs, and sautéed vegetables, perfect for breakfast or brunch.

  • Tortillas (corn or flour)
  • 4 large Eggs
  • 1 small Onion, chopped
  • 1 medium Tomato, chopped
  • 1 Jalapeño, chopped
  • 1 cup Cheese (shredded; can use cheddar or queso fresco)
  • Salt (to taste)
  • Pepper (to taste)
  • Oil (for frying)

Instructions

  1. Cut the tortillas into small, bite-sized pieces. In a skillet over medium heat, add enough oil to cover the bottom, then fry the tortilla pieces until they become crispy and golden, usually about 3-5 minutes. Remove from the pan and drain on paper towels.
  2. Add a little more oil if necessary to the same skillet, and toss in the chopped onion, tomato, and jalapeño. Sauté for about 5 minutes or until the vegetables are soft and fragrant, stirring occasionally.
  3. Crack the eggs in a bowl, adding salt and pepper to taste. Beat them well until they’re completely mixed and slightly frothy. Pour the beaten eggs into the pan over the sautéed veggies.
  4. Gently scramble the eggs, mixing them thoroughly with the vegetables. Once the eggs start to set but are still slightly runny, fold in your crispy tortilla pieces. Continue to cook until the eggs are fully set.
  5. Remove the pan from heat and sprinkle the shredded cheese over the mixture, letting the residual heat melt it beautifully. Serve your Migas hot, perhaps with a side of salsa or avocado for an extra pop of flavor.

Notes

Serve with a side of fresh fruit or a simple green salad. Enjoy with a dollop of sour cream or hot sauce.
