Delightful mini cheesecakes with a creamy filling and buttery graham cracker crust, perfect for any occasion.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons butter, melted
  • Toppings of choice (fruit, chocolate, caramel, etc.)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Create the base by combining graham cracker crumbs and melted butter. Press into muffin tin liners.
  3. Mix the softened cream cheese, sugar, and vanilla extract until smooth.
  4. Add the large egg and mix until just combined.
  5. Assemble the cheesecakes by pouring the cream cheese mixture over the crusts in the muffin tin.
  6. Bake for about 15-18 minutes until set with a slight jiggle.
  7. Cooling off: Let cool to room temperature, then refrigerate for at least 2 hours.
  8. Garnish right before serving with toppings of choice.

Notes

Make sure to let the cream cheese come to room temperature for a smooth filling. Rotate the pan halfway through baking for even results.
