  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup mint chocolate chips
  • 1/2 teaspoon peppermint extract
  • Green food coloring (optional)
  • Chocolate frosting (for icing)
  • Whipped cream (for topping, optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk.
  6. Fold in the mint chocolate chips and peppermint extract.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  10. Once cool, frost with chocolate frosting and serve with whipped cream if desired.

Notes

For a deeper chocolate flavor, consider adding a pinch of espresso powder to your dry ingredients. Store any leftovers in an airtight container for up to 3 days at room temperature.
