Deliciously moist muffins packed with sweet carrots, juicy pineapple, and crunchy nuts, perfect for breakfast or a snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup raisins or currants
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the flour, sugar, baking powder, baking soda, cinnamon, and salt in a large bowl.
  3. Whisk together the vegetable oil, eggs, and vanilla extract in another bowl.
  4. Combine the wet ingredients with the dry ingredients and stir until just blended.
  5. Fold in the grated carrots, crushed pineapple, raisins, walnuts, and shredded coconut, if using.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the muffins for a few minutes before transferring them to a wire rack.

Notes

Serve warm with butter or honey. Can be stored in an airtight container at room temperature for up to three days.
