A unique twist on traditional Eggs Benedict featuring crispy latkes topped with smoky Canadian bacon and perfectly poached eggs, finished with rich hollandaise sauce.

Ingredients

  • 4 latkes
  • 2 large eggs
  • 2 slices of Canadian bacon
  • 2 tablespoons of hollandaise sauce
  • Chopped chives for garnish
  • Salt and pepper to taste

Instructions

  1. Cook the latkes according to your recipe or package instructions until crispy and golden. Keep warm.
  2. Sauté the Canadian bacon in a skillet over medium heat for about 3-4 minutes per side.
  3. Poach the eggs in gently simmering water for about 3-4 minutes until the whites are set.
  4. Assemble by placing one poached egg on each slice of bacon atop the latkes.
  5. Drizzle hollandaise sauce generously over the poached eggs.
  6. Garnish with chopped chives, season with salt and pepper, and serve immediately.

Notes
