A vibrant and hearty Nigerian chicken stew bursting with bold flavors, perfect for gatherings.

Ingredients

  • 2 pounds fresh bone-in chicken cuts
  • 1 teaspoon salt
  • 1 teaspoon freshly cracked pepper
  • 1 teaspoon paprika
  • 1 tablespoon curry powder
  • 1 teaspoon thyme
  • 1 medium onion, sautéed until sweet
  • 1/4 cup vegetable oil or olive oil
  • 4 medium fresh Roma tomatoes
  • 1 medium red bell pepper
  • 1 medium scotch bonnet pepper (adjust to spice preference)
  • 2 tablespoons tomato paste
  • 1 cube bouillon
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1 medium lime (optional)

Instructions

  1. Marinate the chicken: In a bowl, combine the chicken pieces with salt, pepper, paprika, curry powder, thyme, and sautéed onion. Mix well and let marinate for at least 30 minutes.
  2. Sear the chicken: Heat oil in a skillet over medium-high heat. Add marinated chicken and sear until golden-brown on all sides. Remove from skillet.
  3. Blend the stew base: In a blender, combine Roma tomatoes, red bell pepper, and scotch bonnet pepper. Blend until smooth.
  4. Fry the tomato paste: In the same skillet, fry tomato paste over medium heat for 2 minutes.
  5. Combine and simmer the stew: Add blended mixture to the tomato paste in the skillet and simmer for 10 minutes.
  6. Add flavor boosters: Stir in garlic powder, ginger powder, and crumble bouillon into the sauce. Return the browned chicken to the skillet.
  7. Simmer to perfection: Cover and let simmer on low for 25 to 30 minutes until chicken is cooked and tender.
  8. Garnish and serve: Sprinkle with parsley or cilantro and optionally squeeze lime juice before serving.

Notes

For a smoother stew, blend the sauce longer before adding chicken. Adjust spice level based on preference.
