A light and creamy cheesecake with a zesty lemon twist, perfect for warm days and gatherings.

  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/4 cup lemon juice

Instructions

  1. Create the Graham Cracker Crust: In a bowl, mix graham cracker crumbs and melted butter until everything is combined and has a sandy texture. Press the mixture into the bottom of a springform pan to form an even crust.
  2. Beat the Cream Cheese Mixture: In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy.
  3. Whip the Heavy Cream: In another bowl, take your heavy cream and whip it until stiff peaks form.
  4. Combine Cream Cheese and Whipped Cream: Carefully fold the whipped cream into the cream cheese mixture, making sure to maintain the fluffy texture.
  5. Add a Zing with Lemon Juice: Stir in the lemon juice until everything is well combined.
  6. Assemble the Cheesecake: Pour the cream cheese mixture over the crust in the springform pan, smoothing the top with a spatula for an even finish.
  7. Chill and Set: Refrigerate the cheesecake for at least 4 hours, or until set.
  8. Serve & Enjoy: Once chilled, slice your cheesecake and serve it cold. Optionally, top with fresh fruit or a drizzle of chocolate sauce.
