A refreshing no-bake vegan dessert that captures the zesty flavor of traditional key lime pie while being completely dairy-free.

  • 1 1/2 cups vegan graham cracker crumbs
  • 1/3 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 cup cashews, soaked
  • 1/2 cup fresh lime juice
  • 1/4 cup coconut cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Vegan whipped cream (for topping)
  • Lime slices (for garnish)

Instructions

  1. Combine the vegan graham cracker crumbs, melted coconut oil, and maple syrup until everything is well incorporated. Press this mixture into the bottom of a pie dish and chill for 30 minutes.
  2. Add the soaked cashews, fresh lime juice, coconut cream, powdered sugar, and vanilla extract to a blender. Blend until smooth and creamy.
  3. Pour the lime filling into the chilled crust and smooth the top. Chill the pie for at least 2 hours to firm up.
  4. Top the pie with vegan whipped cream and garnish with fresh lime slices just before serving.

Notes

For the best texture, soak cashews for at least 2 hours before blending. You can also experiment with different sweeteners or add lime zest for extra flavor.
