Delicious and wholesome carrot cake bars that are sugar-free, featuring cottage cheese and packed with nutritious ingredients.

Ingredients

  • 1 cup cottage cheese
  • 2 cups grated carrots
  • 2 eggs
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup honey or maple syrup (optional)
  • 1/2 cup walnuts or pecans (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix together the cottage cheese, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. If using, fold in the grated carrots and nuts.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow to cool before cutting into bars and serving.

Notes

These bars can be stored in an airtight container for 3-4 days at room temperature or up to a week in the refrigerator.
