Deliciously chewy cookies with a sweet marshmallow filling, perfect for satisfying your sweet tooth and evoking childhood memories.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract until smooth.
  4. Mix together the flour, baking soda, ground cinnamon, and salt in another bowl.
  5. Gradually add the dry mixture to the creamed butter and sugars, mixing until just combined.
  6. Fold in the rolled oats until evenly distributed.
  7. Drop heaping tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  8. Bake for about 10-12 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on baking sheets before transferring to a wire rack.
  10. Beat together the marshmallow fluff and powdered sugar until fluffy for the filling.
  11. Spread the filling on half the cookies, topping with another cookie to create sandwiches.

Notes

Store cookies in an airtight container at room temperature for up to a week, or refrigerate for longer storage.
