A comforting one-pan creamy meat and potato dish that’s ready in just 30 minutes—a perfect weeknight meal.

  • 1 lb ground meat (beef, turkey, chicken, or pork)
  • 12 small potatoes, diced (or as many as you like; cut to ~½-inch pieces)
  • 1 can condensed cream soup (mushroom, chicken, or celery)
  • ¾ cup cold milk (plus a splash more as needed)
  • Salt and freshly ground black pepper, to taste
  • Shredded cheese, as desired
  • Fresh herbs, for garnish
  • Frozen vegetables, for extra nutrition

Instructions

  1. Heat a large skillet or Dutch oven over medium-high heat. Add the ground meat, season with salt and pepper, and cook, breaking it up until it’s fully browned. Drain any excess fat if needed to keep it lighter and healthier.
  2. Stir in the diced potatoes and cook, stirring occasionally for about 5 minutes. This allows them to start softening and absorbing all the delicious flavors from the meat.
  3. Add the condensed cream soup and ¾ cup of cold milk into the skillet. Stir until you have a smooth and creamy mixture. If it seems too thick, don’t hesitate to add a splash more milk!
  4. Reduce the heat to medium-low, cover the skillet, and let it simmer. Stir occasionally for about 10-15 minutes until the potatoes are fork-tender. If at any point you find the mix starts sticking, add a splash of milk or water to loosen things up while lowering the heat slightly.
  5. Taste the skillet to adjust salt and pepper as needed. If you’re a cheese lover, sprinkle some shredded cheese over the top and let it melt into the creamy goodness. Add frozen vegetables during the last 3-4 minutes of cooking for that extra nutrition. Garnish with fresh herbs before serving hot to the family.
