A comforting one-pan meal featuring smoky BBQ chicken, sweet honey, and fluffy rice topped with colorful mixed vegetables.

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season and sear the chicken in a large skillet over medium heat for about 5 minutes on each side until browned.
  2. Mix the BBQ sauce and honey in a small bowl; pour over the chicken.
  3. Combine the rice and chicken broth; stir to combine.
  4. Bring to a simmer; cover and cook on low for about 20 minutes until rice is tender.
  5. Steam the mixed vegetables on top during the last 5 minutes of cooking.
  6. Rest and fluff the rice with a fork after sitting for 5 minutes before serving.

Notes

Leftovers can be kept in an airtight container in the fridge for up to 3 days. This dish also freezes well for up to 3 months.
