A vibrant, one-pan dish featuring quinoa, black beans, corn, and colorful vegetables, perfect for busy weeknights or as a nutritious side dish.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Sauté the onion and bell pepper in a large pan over medium heat until soft.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the quinoa, vegetable broth, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper to the pan, stirring well to combine.
  4. Allow the mixture to come to a boil.
  5. Reduce the heat to low, cover the pan, and let it simmer for about 20 minutes.
  6. Remove from heat, fluff the quinoa gently with a fork, and garnish with fresh cilantro.

Notes

Rinse the quinoa before cooking to remove bitterness. Customize with your favorite veggies or spices.
