One-Pot Chicken and Rice

A comforting and simple one-pot meal featuring tender chicken, fluffy rice, and a medley of peas and carrots.

Ingredients

  • 1 pound chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat until it shimmers.
  2. Add the chopped onion and minced garlic to the pot. Sauté until softened, about 3 to 4 minutes.
  3. Season chicken with salt, pepper, and paprika. Brown the chicken in the pot.
  4. Stir in the long-grain rice for 1-2 minutes.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for about 20 minutes.
  7. Add frozen peas and carrots, cover, and let cook for an additional 5-10 minutes.
  8. Fluff rice with a fork and garnish with fresh parsley before serving.

Notes

For leftovers, store in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of broth.
